Resipi : Grilled Salmon w Zucchini Pasta

Wow sangat produktif saya menaip resipi² harini haha. Rajin kan kan.. Payback time. Lepas ni senyap semula dalam 2 bln haha. Takpelah, cincai la.. 

Kids Recipe!

Anyway, tak lengkap pulak hari kalau tak upload kids recipe. Kebetulan, harini my lil dude is feeling under the weather. Dia ni ada a few makanan yang dia takkan tolak even demam panas. Satu is macaroni and cheese and the other one is zucchini or timun jepun. hehe So, malam ni, I made him grilled salmon (since thyme is sgt byk lagi haha) and Zucchini Pasta. Senang sangat. And sedap. Despite his condition, si Ghazi managed to finish em all. Nyummm!

Bahan Salmon Grilled
Salmon sepotong dah dibersih dgn lemon 
Sweet paprika
Black pepper
Garlic
Salt
Thyme
Extra virgin Olive oil

Cara Grilled
Semua bahan kat atas lumur dengan penuh kasih syg kat Salmon tu sambil senyum² sket.. Then finish em up with 4 sudu Extra Virgin Olive Oil tu. Then, Bakar dlm 20minit.

Bahan Zucchini Pasta
Spaghetti rebus-titikkan olive oil sket supaya tak melekat sesama dia
Bwg holland- separuh potong dadu
Timun Jepun/Zucchini - potong dadu atau panjang²
Tomato- separuh potong dadu
Dried Thyme - 1 sudu kecil
Organic chicken bouillon/knorr chicken cube pun boleh kalau susah nk cari. Rasa dia lebih kurang.

Cara  
Basic je. Goreng bwg naik bau then throw in the zucchini and chicken cube. Then campak spaghetti yg dah rebus tadi. Last skali sebelum angkat tabur dried thyme and campak tomato ok.

Goreng smpi nampak rasi and the served with Grilled Salmon. Nyummmm!

Resipi : Patin Masak Asam dengan Belimbing Hitam

Assalamualaikumwbt & Afternooooooooon! (Ghazi made me tekan 'O' banyak² hehe)


Ikan Patin  bukan je boleh  masak tempoyak. One of the almost famous dish adalah Masak Assam. Perh. Actually this is my favourite compared to Patin masak tempoyak. I will rate this number one in anyday. Plus  my Mak always put in some belimbing hitam yang membuatkan ia sgt sultry *airliyor meleleh*. Ok takbleh type dah, benti kejap.

Seriously, belimbing hitam is the best asam in cooking most of Malay Food. No offense asam jawa, u still  in my list ehe. Belimbing hitam ni adalah belimbing buluh yang di rebus lama  until it’s shrink and turn colour. *pause, lap airliyor* omaigod!!! Sedapnye kauuuuuu!!!!Perh perh perhhh... ok takyah cite psl si hitam tu dah..terus la dgn bahan pulak.

Eh before that, masak asam ni required no tumis whatsoever. So bwg is no need in this recipe. Sume renih je. Senang kan kan kan.

Ikan Patin
Asam Belimbing Hitam
Kunyit Hidup
Lada hijau kecil
Daun Kunyit
Daun Kesum
Bunga Kantan
Petai
Rebung (Optional) 
Garam

Cara
Tumbuk kunyit+lada sampai lumat.
Letak air dlm periuk smpi ampuh ikan, masukkan semua di atas. Didihkan sampai masak.

Weee~ Resipi mak saya! sapa suka sapa? Sedap nyah. Sebenarnya resipi ni dah lama mak selalu buat and actually this one di ambil pn gmbr masa mak tengah masak :) Mak saya the best cook in the world. iyeahhhh! Oh bytheway, seriously... kitorg anak beranak tak tahu pun nama masakan ni apa hahaha. Tapi tau la apa yang di masuk semua. So i end up dgn nama Cekur Manis ala Mak Yah. Tapi cam huduh lak. Sorry mak, so ktorg buh je la nama udang kering. Glemer kau udang kering. Padahal bukan kau pun susah² nak masak! ceh. haha

Anyway, ingredient senang sgt. Tapi rasa tebaboo yer. Check the recipe out. oh pjg lak nk type tu hehe

Kelapa parut
Kunyit hidup
Bwg Putih
Bwg Merah
Udang kering

Cara
Tumbuk Lada hitam+Kunyit hidup+Udang Kering+kelapa parut
Bwg merah mayang+ Bwg putih smackdown sikit je
Tumis kan semua bahan di atas mengikut turutan bermula dgn rempah, bwg and kelapa. Then just threw in the cekur manis and gaul hingga sebati and angkat and Wallaaaaaaah~ siap satu lauk. serius sedap takmain tipu punya. Pastu goreng je ikan garing² makan dgn dia. perghhhh.

Nah, sekarang  pasar cari cekur manis and panaskan kuali masak!

Resipi : Kerang Goreng Kicap

Lagi satu update resipi? aci? Haha sementara tengah rajin. And I finish all my home chores and Abah is helping me with Ghazi's. They are singing happily while doing homework. Wait. Singing? why issit with me is all screams??? haihhhh.. hahaha Anyway, yes. Another simple recipe yet a delish.

Kerang goreng kicap. Saya adalah hantu kerang. Kerang will go shiver to hear my name haha. I am the hantu of shell seafood. Love 'em! And yes, I've been searching this recipe for a long time. A friend from itm used to cook this. And I've been longing to try it since like em. 12 years? hahaha ok lama dah rupanya tinggal zaman sekolah yehehe. Okfine dah tua sikit. Sikit?? Okfine, in denial sikit. Sikit?? hahaha ok dah jom terus ke resipi!!!

Bahan
1/2 kilo Kerang - Basuh bersih².
4 ulas Bwg merah
1 cm Halia
5 ulas Bwg putih
2 batang Serai
Cili kecik
Kicap Manis
Kicap Masin
Sos Tiram
Minyak utk menumis
2 helai (helai ke eh haha)Asam Keping

Cara (senang jeeeee...)
Tumis bwg² and halia.
Masukkan kerang. Bagi di rasi rasa. Then masukkan kicap, sos tiram and cili, asam keping and cili.. Masukkan air, then biar didih sampai dlm 5-7 minit. Kerang dah terbuka, air dah kering then boleh terus makan. Senang kan! hehe

Resipi : Nasi Mandhi. Grilled Chicken. Salad

Haha! sorrrry sorrryyy for the long hiatus. Work and life had been very demanding lately. Nyehehe. And i just go with the flo' baybeh. So anyway anyway..sapa tengok Jamie's 30 Minute Meal cookshow on TLC? phewwww! tengok tak dapur dia? it's a heaven lah! i loooooooooooooooooong for that kinda kitchen. And yes, i'll be getting it one day. Insya Allah. Eh ok. Digress. That's not the point! Nak cerita pasal one recipe that he did yesterday or any otr day la.. lupa bila.. haha he made Jasmine Rice, Grilled Chicken w Homemade Periperi sauce and roasted potatoes kalau taksilap.

And yes, looking at his cooking, i was salivating all over the couch haha. So bila terliyor mula la gatal nak masak kan. Hehehe. So instead of Jasmine Rice (sebab actually dia mcm nasi biasa je) I'm trying Nasi Mandhi (Arab's cuisine) because it was light and easy peasy to make. And since i thot periperi sauce will give u some acidic and burning sensation i try to balance it with simple salad. So, it ala fatoush salad but no so fatoushy cause i left out some ingredients. haha Mana nak cari, sini punya kedai arab jual barbican byk la haha. 

Anyway, to make it easy some more. I just copied the recipe in Ghazi's note book and i snap it! yaaah! this way i dont have to re-type it in the blog hahaha.. Genius eh? hahaha ok tak genius, pemalas rupanya.

So 1st of all, i used a lot of lemon, extra virgin olive oil, olive oil and pepper (black, red, yellow, green) So please do alter the ingredient according to your palate and level of kemasaman ok. If u overdo the lemon, u'll get the periperi sauce too acidic. ok? got me? Experiment, taste.

First of all... let me introduce u guys to the main player of this recipe :) Hopefully, this will help u guys ok.



First. Let's grilled the chicken. . Simple simple stuff. I had some of the ingredient replaced, for the periperi sauce instead of vinegar, I pour in some lemon sprite. Give you the sweetly tangy taste. And for seasoning. I throw in some extra stuff and I'll mention it later.

And i pre-grilled the chicken before soak it in the periperisauce and grilled it AGAIN in the oven.  Seasoned your chicken with pepper, sweet paprika, salt, thyme (a lots), garlics and extra virgin olive oil. Masak kasik nmpk dia dah separuh masak. And smell..hurmmmmm~ Then, blend your ingredients tu make a peri peri sauce. Remember, always taste and season. Taste and season. Until it is ok. When I'm blending the sauce, i didnt put any water sbb sprite lemon and lemon itself is enough.

Masukkan ayam and sauce in the oven. And grilled about 20mins or more.

Next is Salad. The simplest one. Just make sure u seasoned it just nice with lemon and olive oil and salt also black pepper. You may want to lay down the pepper if there's kid involve in the parteeey. hehe

Shud be fatoush salad but i'm missing some of the ingredients, but if u guys can find the Sumac's spice and bread. Then, it's shud be complete and can graduate as Fatoush Salad ;)

See, i told u it's super easy.


Next and the last one. Nasi Mandhi. Just make sure u have the right amount of water. 2:1 (Water:Rice) But, i ran out of basmathi and add up some beras siam. 3 pot basmathi and 1 pot beras wangi. I soaked em for a good 1 hour. Then air boleh letak 1:1. When u cook, always check ok. Kalau tak lembut just pour in some more hot water to make it puffy and lovable.. eh? hehe

Rempah penumis perlu ditumis dulu smpi naik bau then baru masukkan campuran bwg+halia ok. Naik bau then throw in the kismis .. a little later masukkan air, kacau sket and then masukkan  beras and  pour in dlm rice cooker and let the rice cooker do the rest. Senang kan :)

How to make it colourful? senang. Air yang dicampur masa awal tu, masukkan sikit serbuk kunyit. So itu akan jadi base colour dia. Masuk 1 tbs kecil ok. Dont worry, takde rasa pun naty. Then bila masak, add some more colouring. Kalau nk merah. buh titik² merah and kuning pekat kan. then gaul and naty jd la bintik² cantik sedap di makan!

So, how was it? Senang kan? Please do try. Kalau semua bahan ada dalam dapur, it only take  under 1 hour untuk siap semua. Tapi the taste. is umppph! sedap puas hati :)
